1 pound ground turkey
¾ cup panko bread crumbs
1 tbsp. extra virgin olive oil
1 large egg, lightly beaten
1 cup shredded tart apple, washed, with peel on
1½ tbsp. fresh rosemary, finely chopped
1 tsp. garlic, minced
1 small onion, minced
1 tsp. Kosher salt
½ tsp. black pepper
Preheat the oven to 400 degrees.
In a small sauté pan over medium heat, add the olive oil, onion, and garlic. Sauté for 2-3 minutes or until onion is translucent. Set aside to cool.
Combine the turkey, bread crumbs, egg, apple, rosemary, salt, and pepper in a large mixing bowl. Add cooled onion mixture. With your hands, lightly mix to combine.
Roll the mixture into 1½ inch balls, using a small scoop to help portion. Place meatballs on a parchment-lined sheet tray and bake in the oven for 12-14 minutes or until done.
