Pimiento Cheese Dip

Did you know that Pimento Cheese is a southern classic? There is something about the creamy textures that the cream cheese and the mayonnaise make in this simply irresistible dish. This dip pairs well with Free Run's Mezzo.

Ingredients

8 oz. block sharp cheddar cheese
½ cup mayonnaise
1 tbsp. dijon mustard
1 tbsp. stone ground mustard
¼ tsp. cayenne pepper
½ tsp. kosher salt
½ tsp. black pepper
2 tbsp. fresh parsley, chopped
½ cup pimentos or roasted red peppers, finely chopped
½ cup dry white wine

Directions

  1. Shred the cheddar cheese on a box grater or food processor fitted with a grating attachment.

  2. Mix the remaining ingredients in a large bowl.

  3. Add the cheddar cheese and mix to combine.

  4. Place in the refrigerator for a few hours or overnight to set up.

  5. Serve with chips or pretzels.
