8 oz. block sharp cheddar cheese
½ cup mayonnaise
1 tbsp. dijon mustard
1 tbsp. stone ground mustard
¼ tsp. cayenne pepper
½ tsp. kosher salt
½ tsp. black pepper
2 tbsp. fresh parsley, chopped
½ cup pimentos or roasted red peppers, finely chopped
½ cup dry white wine
Shred the cheddar cheese on a box grater or food processor fitted with a grating attachment.
Mix the remaining ingredients in a large bowl.
Add the cheddar cheese and mix to combine.
Place in the refrigerator for a few hours or overnight to set up.
Serve with chips or pretzels.
