Chicken Sausage & Apple Butter Crostini

When it comes to appetizers, they should be simple yet impactful. This appetizer is the perfect choice for a fall appetizer, especially since it has apple in it, which is one of the iconic flavors of autumn. Pairs well with a Dry Riesling.

Ingredients

2 tbsp. unsalted butter
3 medium yellow onions, halved and sliced thinly
4 chicken sausage links
8 oz. fontina, shredded
½ cup apple butter
1 square focaccia bread, cut into 2” squares

Directions

  1. Preheat oven to 350 degrees.  

  2. Melt the butter in a large skillet over medium heat. Add the sausages and cook until cooked all the way through. Remove to a platter.

  3. Add the onions to the skillet and cook for 10 minutes, stirring occasionally. Reduce the heat and continue to cook until the onions are soft and caramelized, another 20 minutes.  

  4. Lightly toast the focaccia bread in the oven for about 2-3 minutes. Slice each chicken sausage crosswise into ½ inch medallions. Spread the apple butter onto the focaccia toast, followed by the cheese and caramelized onions.

  5. Top with a chicken sausage medallion and place back in the oven for 2-3 minutes or until cheese is melted.
