Salted Caramel & Espresso Cookies

Salted Caramel & Espresso Cookies made with Round Barn's Salted Caramel Cream are the cookies you didn’t know you wanted!

Ingredients

1⅔ cups all-purpose flour
¾ tsp. baking powder
¾ tsp. baking soda
2 tbs. ground espresso
½ tsp. kosher salt
¾ cup unsalted butter, softened
⅓ cup dark brown sugar
1 tsp. vanilla extract
1 egg
3 tbs. Round Barn Salted Caramel Cream
12 oz. white chocolate chips
½ cup chopped walnuts

Directions

  1. Preheat the oven to 375 degrees.

  2. In a large bowl, combine the flour, baking powder, baking soda, espresso, and salt. Add the butter, sugar, brown sugar, and vanilla to the bowl of a stand mixer. Beat until light and fluffy, about 3 minutes.

  3. Beat in the egg, and then add the Salted Caramel Cream to combine. Gradually beat in the flour mixture until all ingredients are combined. Stir in white chocolate chips and walnuts.

  4. Scoop dough in 2 tablespoons increments onto an ungreased cookie sheet.

  5. Bake in the oven for 9 minutes. Carefully remove the cookies from the oven and let cool.
